Dynamik der Monoterpenakkumulation in den Rotweinrebsorten Blaufränkisch und Pinot Noir: Eine vergleichende Analyse freier und glykosidisch gebundener Monoterpene im Verlauf der Reife
Abstract
Blaufränkisch and Pinot Noir are emerging grape varieties which, due to their agronomic characteristics, have the potential to adapt well to the challenges posed by climate change. This study investigated the development of 15 different monoterpenes during grape ripening across multiple vineyard sites. Representative grape samples were collected at defined ripening stages and analysed using GC-MS to quantify the concentrations of free and bound monoterpenes. The aim was to characterise the temporal dynamics of monoterpene accumulation, differentiate between free and bound forms, and identify potential site-specific effects. The results reveal site-dependent variations in monoterpene accumulation. While an overall increase in total monoterpenes was observed across all locations, the presence of the free fraction varied according to environmental conditions. In Pinot Noir, free monoterpenes were detected at later ripening stages in samples from the trial site Guntramsdorf, whereas an earlier accumulation was observed in Oberwaltersdorf. In Blaufränkisch, the concentration of free monoterpenes decreased with advancing ripeness at the trial site Lutzmannsburg, while in Horitschon, it remained stable or showed a slight increase. Further research is required, particularly regarding the interaction between genetic factors and environmental conditions, as well as the sensory relevance of monoterpene profiles in the final wine.
